🍞 White Chocolate Cranberry Loaf – The Bread Everyone Asks For!

I brought one of these to my neighbor, and five minutes later she was calling me, practically begging for the recipe! This loaf is that good — soft, buttery, filled with tart cranberries and pockets of creamy white chocolate that melt right in your mouth. Perfect with coffee or tea, and it makes your whole kitchen smell heavenly.

✨ Ingredients:

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • ¾ cup dried cranberries
  • ¾ cup white chocolate chips (or chopped white chocolate)

For the glaze:

  • ½ cup powdered sugar
  • 1–2 tbsp milk or cream
  • ¼ tsp vanilla extract

👩‍🍳 Directions:

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla.
  5. Alternate adding dry ingredients and milk, mixing until smooth.
  6. Fold in cranberries and white chocolate gently.
  7. Pour batter into loaf pan and bake for 45–55 minutes, or until a toothpick comes out clean.
  8. Let cool, then drizzle with glaze made by whisking powdered sugar, vanilla, and milk together.

💡 Tip: Warm it up for 10 seconds in the microwave before serving — it tastes freshly baked every time.
